    About this recipe: Nothing spells comfort food like macaroni cheese, and this lighter recipe is under 400 calories per portion! You can use macaroni or any other pasta shape.

    • 1 tablespoon salt
    • 50g uncooked macaroni
    • 1 tablespoon cornflour
    • 100ml skimmed milk
    • 30g strong Cheddar cheese, grated
    • 1/2 teaspoon mustard
    • salt and pepper to taste

    1. Boil a saucepan of water with a tablespoon of salt. Add pasta and cook as directed on packet.
    2. In a saucepan, mix the cornflour with 2 tablespoons of the milk until it forms a smooth paste. Add the remaining milk and slowly bring to the boil stirring continuously.
    3. Once thickened, add the cheese, mustard and salt and pepper. Remove from heat.
    4. Tip cooked pasta into the saucepan with the cheese sauce. Mix and heat very gently until the pasta is all coated. Serve!


    The recipe comes in at 365 calories as it is, however it can be reduced with the use of low calorie cheese and skimmed milk. The mustard is used as it brings out the flavour of the cheese.
