Golden syrup sponge cake
A moist, surprisingly light sponge made with brown sugar and golden syrup. Made as a traybake, it's easy to ice and serve in squares.
Ingredients
Serves: 8
- 100g dark brown soft sugar
- 200g butter or margarine, softened
- 2 eggs
- 2 tablespoons golden syrup
- 200g self raising flour

- Preheat oven to 170 C / Gas 3.
- Cream together the butter and brown sugar.
- Whisk together the eggs and golden syrup and add to the sugar-butter mix.
- Fold in the flour, and mix everything really well till it has a smooth consistency.
- Pour the mix into a small greased tray bake tin. (Or you could make fairy cakes or a simple round cake with it. You decide!) Sprinkle the top with a little extra brown sugar.
- Put it in the preheated oven, for around half an hour, or when a knife, stuck into the middle of the cake, comes out clean.
- Enjoy!

Really lovely tasty syrup cake. Very quick and easy to make. I also added a teaspoon of baking powder. My boys all loved it. Will def be a regular pudding in our house! - 05 Sep 2014
