    • Biscuits
    • 110g butter
    • 110g caster sugar
    • 225g plain flour
    • 1 egg
    • 1 lemon, zested
    • 1 orange, zested
    • Icing
    • 110g icing sugar
    • 60g butter
    • 1 orange, zested and juiced
    • pinch of salt

    1. Preheat oven to 180 C / Gas mark 4. Line a baking tray with parchment.
    2. Cream 110g butter and caster sugar together until light and fluffy. Mix in flour, egg, lemon zest, orange zest and salt to form a stiff dough. Roll dough out on a lightly floured surface to 1/4cm thick; cut into squares or stamp out rounds. Prick pastry with a fork and place on prepared tin.
    3. Bake in the preheated oven until golden, about 15 minutes; cool biscuits on a wire rack.

    5. Meanwhile, prepare the icing by beating together icing sugar, 60g butter, orange zest and 1 teaspoon orange juice.
    6. Spread a layer of icing on a biscuit and sandwich with another.
