About this recipe:
A simple to make and tasty recipe for pipérade, or piperrada, a Basque dish with tomatoes, peppers and eggs. Serve with a warm baguette.
2 tablespoons oil
1 large onion, sliced
1 red or green pepper, seeded and sliced
2 garlic cloves, crushed
4 tomatoes, skinned and chopped
salt and pepper to taste
2 tablespoons milk
- In a large frying pan, heat the oil. Add the onion and pepper and cook and stir until soft. Add garlic, tomatoes, salt and pepper and simmer for 5 minutes.
- Mix the eggs with the milk and pour in. Cook for 3 to 4 minutes. Serve immediately.
