Easy pipérade

    A simple to make and tasty recipe for pipérade, or piperrada, a Basque dish with tomatoes, peppers and eggs. Serve with a warm baguette.

    Serves: 2 

    • 2 tablespoons oil
    • 1 large onion, sliced
    • 1 red or green pepper, seeded and sliced
    • 2 garlic cloves, crushed
    • 4 tomatoes, skinned and chopped
    • salt and pepper to taste
    • 4 eggs
    • 2 tablespoons milk

    1. In a large frying pan, heat the oil. Add the onion and pepper and cook and stir until soft. Add garlic, tomatoes, salt and pepper and simmer for 5 minutes.
    2. Mix the eggs with the milk and pour in. Cook for 3 to 4 minutes. Serve immediately.
