Indonesian nasi goreng

    I tend to make this Indonesian fried rice with prawns and leftover pork fillet but you can use leftover roast lamb, beef, chicken or tofu - whatever you like best! This dish is traditionally topped with fried eggs or omelettes, cut into strips.

    Serves: 6 

    • vegetable oil, for cooking
    • 225g chopped onion
    • 2 cloves garlic, finely chopped
    • 3 small red peppers, deseeded and sliced
    • 2 small leeks, thinly sliced
    • 110g uncooked prawns, shelled and deveined
    • 675g cooked rice
    • 225g leftover pork fillet, chopped
    • 2 tablespoons soy sauce
    • salt to taste
    • fish sauce (optional)

    1. Heat 1 or 2 tablespoons vegetable oil in a wok or large frying pan; stir in onions and garlic to soften. Add peppers, leeks and prawns; stir gently until prawns are partially cooked.
    2. Stir in cooked rice, pork and soy sauce; season with salt and fish sauce to taste. Cover and heat through gently, but thoroughly, stirring occasionally.
