Roast asparagus

    Basic roast asparagus is easy to do and I love how the tips of the spears get slightly crunchy. Enjoy this as a side or use the asparagus in a variety of recipes - omelettes, quiches, pasta dishes, pizza, etc.

    Ingredients
    Serves: 4 

    • 1 bunch asparagus, trimmed
    • 2 tablespoons olive oil
    • 1/2 teaspoon sea salt (or to taste)
    • 1/2 teaspoon ground black pepper (or to taste)

    Method

    1. Preheat the oven to 220 C / Gas 7.
    2. Toss to coat the asparagus in the olive oil, then sprinkle with salt and pepper. Arrange the asparagus onto a baking tray in a single layer.
    3. Roast in the preheated oven until just tender, 10 to 15 minutes depending on thickness. Serve straightaway or at room temperature.

    Get creative

    Add your own touches to this basic roast asparagus recipe. You could top the roast asparagus with seasoned breadcrumbs, grated cheese, lemon zest, finely chopped almonds... the possibilities are endless! You could also drizzle with vinaigrette or lemon juice just before serving.
