Cold tomato soup

    This is a refreshing no-cook cold tomato soup ideal for summer and outdoor gatherings! Great served as a quick starter and easily made ahead of time, just chill in the fridge until needed.

    Serves: 4 

    • 1 (400g) tin tomatoes
    • 1 green pepper, seeded and roughly chopped
    • 1 small onion, chopped
    • 1 clove garlic
    • 50ml olive oil
    • salt and freshly ground black pepper, to taste
    • 1 pinch caster sugar
    • 2 cucumbers - peeled, seeded and shredded
    • 1 handful chives, chopped

    1. Combine the tomatoes, green pepper, onion, garlic, olive oil, salt, pepper and sugar in a food processor, or using a handheld liquidiser, and pulse until smooth.
    2. Serve cold, garnished with cucumber and chives.
