250g penne or conchiglie pasta, cooked and drained
1 handful grated or sliced mozzarella

In a large saucepan cook the mushrooms in the oil until soft then add the chilli, garlic and chorizo. Cook for a further 2 minutes stirring constantly, then add the passata and herbs and mix thoroughly.
Mix well with the cooked pasta in a casserole dish and top with the mozzarella.
Bake at 200 C / Gas 6 for 10 to 15 minutes, or until cheese is slightly browned. Serve with freshly baked bread.
Can be made as hot or as mild as you like by adding more chilli or removing the seeds. You can also add onion at stage 1 if you wish.
