About this recipe:A piquant snack with a difference. As a lunch, brunch or supper snack, this is hard to beat. The Cheddar and Parmesan mix makes all the difference. Delicious with a salad and a glass (or two) of chilled white wine.
1 tomato, finely chopped
1/2 onion, finely chopped
120g (4 oz) mix of grated Cheddar and Parmesan cheese
1 pinch ground cumin
1 knob butter
1 to 2 tablespoons chopped fresh coriander
1 pinch chilli powder
2 slices ciabatta bread

Mix all ingredients together in a bowl (except for the bread).
Toast bread on both sides.
Spread mixture on toasted slices, making sure toast is completely covered.
Place under grill until cheese bubbles and browns slightly.
Instead of coriander, you can use a mixture of herbs, such as oregano, basil and parsley.
You can use any sort of crusty bread if you don't have ciabatta.
