Unay's jam muffins

    These quick and easy jam muffins have a fabulous taste. You can add different flavoured jam. You could also divide the mixture in half and add 4 tablespoons of one flavour to each half.

    Ingredients
    Makes: 12 muffins

    • 250g plain flour
    • 100g caster sugar
    • 2 teaspoon baking powder
    • 1 egg
    • 200ml milk
    • 4 tablespoons oil
    • 8 tablespoons jam

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 200 C / Gas 6. Line a 12 hole muffin tray with paper cases.
    2. Add all the dry ingredients in a bowl, mix well.
    3. Make a well in the middle of the bowl, add all wet ingredients, and mix well. Finely fold in the jam. Spoon into prepared cases.
    4. Bake in the preheated oven for 15 minutes.

    Tip

    If the mixture is too stiff then add a little milk.
