Single man's roasted spicy sweet potatoes

    Great side dish to any meal and a great alternative to normal boring potatoes. This is a one person serving so you can double or add more if cooking for two or more.

    Serves: 1 

    • 1 medium sweet potato
    • 1 to 2 garlic cloves
    • 2 fresh red chillies
    • fresh thyme

    1. Peel the sweet potato and cut into either chip shapes or cut into decent sized cubes.
    2. Parboil potatoes for 8 to 10 minutes in boiling water.
    3. Whilst potatoes are parboiling, pre-heat the oven to 220 C / Gas 7.
    4. Once potatoes are done, drain water and shake in a colander to rough up the edges.
    5. Crush the garlic cloves and dice the chillies, then mix with the potatoes and thyme. Place in a single layer on a baking tray.
    6. Place into oven and cook for 30 to 35 minutes, or until your preferred goldeness. Eat and enjoy.


    For a flavour boost, try tossing the parboiled potatoes with a drizzle of olive oil and salt and pepper before roasting.

    These had a nice taste and I would do it again but they were not crispy like usual potatoes  -  21 Dec 2016
