Based on my mum's old recipe with bacon for a new twist. A fabulous comfort dish any time, especially on a cold frosty evening. Fit for any table or occasion.

1 large cauliflower, leaves removed and cut into florets
45g (1 1/2 oz) plain flour
60g (2 oz) butter
300ml full fat milk
120g (4 oz) full flavoured cheese, grated
salt and freshly ground black pepper
3/4 teaspoon English mustard
1 handful fresh breadcrumbs
4 streaky bacon rashers
crusty bread, to serve

Boil cauliflower in salted water for some 5 minutes until tender, but still has a bite in the stalk. Drain but reserve 150-200ml of the cooking water. Place the cauliflower in a baking dish.
Heat the grill to high.
Melt 40g of the butter in a small pan, stir in the flour and cook for a minute or so. Blend in the milk and bring to the boil, stirring until thickened, with no lumps.
Add the reserved cooking liquid, 100g of the cheese, pepper and mustard. Stir well until cheese is melted.
Pour the sauce over the cauliflower and scatter the remaining cheese over the top. Sprinkle over the breadcrumbs and put cauliflower mixture under the hot grill until cheese on top is golden and bubbling.
Meantime, fry bacon rashers until crispy.
When ready, sprinkle crispy bacon over the top of the cauliflower cheese and serve with crusty bread.
Use a strong cheese. I use both Parmesan and Cheddar.
