Quick spinach soup

    If Popeye had a favourite soup, this would be it! This quick spinach soup can be made with fresh or frozen spinach, depending on what you have to hand and can be garnished with croutons or a dollop of crème fraiche for an extra treat.

    Serves: 4 

    • 60g (2 oz) butter
    • 1 onion, chopped
    • 60g (2 oz) plain flour
    • 300ml (1/2 pt) milk
    • 600ml (1 pt) chicken stock
    • 450g (1 lb) spinach, chopped
    • 1 pinch ground nutmeg
    • salt and pepper, to taste

    1. Melt the butter in a saucepan over medium heat. Add the onion and cook and stir until tender, about 5 minutes. Stir in the flour then gradually stir in the milk and stock and bring to the boil.
    2. Add spinach and simmer until wilted, 2 to 3 minutes. Remove from the heat and season with nutmeg, salt and pepper. Blend the soup in a food processor or using a handheld liquidiser until smooth. Ladle soup into warmed bowls and serve immediately.
