Combine yoghurt, cream cheese, egg yolk, mace and black pepper in a large plastic mixing bowl. Fold in grated Stilton cheese and chopped pear.
Melt gelatine in water until completely dissolved; pour into yoghurt mixture and stir thoroughly. Whip egg white until stiff and carefully fold into mousse. Pour into individual ramekins and place in the refrigerator until set, at least 30 minutes.
