Stilton and pear mousse

    Stilton cheese and ripe pears are a beautiful pairing. This recipe is for a delicious cold mousse that is easy to prepare and a delight to serve as a starter.

    Serves: 6 

    • 140g plain yoghurt
    • 60g cream cheese, softened
    • 1 egg, separated
    • 1/4 teaspoon ground mace
    • Freshly ground black pepper, to taste
    • 170g Stilton cheese, grated
    • 2 ripe pears - peeled, cored and chopped
    • 15g gelatine
    • 3 tablespoons warm water

    1. Combine yoghurt, cream cheese, egg yolk, mace and black pepper in a large plastic mixing bowl. Fold in grated Stilton cheese and chopped pear.
    2. Melt gelatine in water until completely dissolved; pour into yoghurt mixture and stir thoroughly. Whip egg white until stiff and carefully fold into mousse. Pour into individual ramekins and place in the refrigerator until set, at least 30 minutes.
