About this recipe: These shortbread biscuits are studded with crystallised ginger and glace cherries. Nice to have in your Christmas biscuit selection.

Makes: 1 dozen biscuits

  • 125g butter
  • 100g caster sugar
  • 170g plain flour
  • 1 1/2 teaspoons baking powder
  • 40g chopped crystallised ginger
  • 3/4 teaspoon ground ginger
  • 55g chopped glace cherries

Prep:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat the oven to 190 C / Gas 5. Lightly grease a baking tray.
  2. Cream butter and sugar until light and fluffy. Stir in flour, baking powder, crystallised ginger, ground ginger and cherries. Form into balls and place on prepared tray, leaving some space between them as they tend to spread a little.
  3. Bake in the preheated oven until golden and crisp on the edges, about 15 minutes.

I was really looking forward to making these, and then I noticed there is no mention of type and amount of sugar to use. If this could be updated I'd love to give these ones a go. Thanks. P.S. Well I made them with 100g Vanilla Caster Sugar and after giving them to friends and family to try have been told they are a resounding success. Now I have to now go and bake another batch to keep up with demand. x - 07 Apr 2013
