Apricot nut loaf

    This sweet apricot and nut loaf cake with a hint of orange is perfect sliced, toasted and slathered with butter. Make it dairy free by using oil instead of butter.

    Makes: 2 loaves

    • 110g (4 oz) dried apricots
    • 2 eggs
    • 220g sugar
    • 1 tablespoon butter, melted
    • 330g self-raising flour
    • 1/2 teaspoon salt
    • 120ml orange juice
    • 1/2 orange, zested
    • 125g chopped nuts

    1. Preheat the oven to 180 C / Gas 4. Grease two loaf tins.
    2. Soak the apricots in lukewarm water for 30 minutes. Drain and cut into small pieces.
    3. Beat together eggs and sugar; add apricots, butter, flour, orange juice and zest. Fold in apricots and chopped nuts and pour into prepared tins.
    4. Bake in the preheated oven until a skewer inserted into the centre of the loaves comes out clean, 40 to 60 minutes.
