Creamy onion tart

    This tart is creamy and savoury and perfectly combines the light sweetness of the onion with the saltiness of bacon. Serve with a salad on the side and a glass of chilled white wine. Feel free to omit the bacon for a vegetarian onion tart.

    • For the pastry
    • 110g (4 oz) softened butter
    • 225g (8 oz) plain flour
    • 1 pinch salt
    • 1 egg
    • For the filling
    • 225g (8 oz) onions, finely chopped
    • 125g (4 1/2 oz) butter
    • 50g (2 oz) plain flour
    • 600ml (1 pt) milk
    • salt and pepper, to taste
    • grated nutmeg, to taste
    • 2 egg yolks
    • 2 to 4 rashers bacon, cooked and chopped

    1. Preheat oven to 200 C / Gas 6. Grease a loose bottomed tart tin.
    2. For the pastry:

    3. Rub the butter into the flour until it resembles breadcrumbs. Add the salt and the egg and a little cold water, if necessary. Gently knead to form pastry.
    4. Roll out the pastry and line the prepared tart tin.
    5. For the filling:

    6. In a frying pan, gently cook and stir onion in 75g butter until soft, but not browned.
    7. In another pan melt 50g butter and stir in flour. Gradually add milk, stirring constantly until sauce is thick and smooth. Add salt, pepper and nutmeg to taste. Let simmer for 10 minutes.
    8. Remove from the heat and mix in 2 egg yolks and the onions.
    9. Pour onion mixture into the pastry and top with bacon.
    10. Bake in the preheated oven for 25 to 30 minutes.
