About this recipe: It's difficult to resist these chewy toffee caramels. The crushed biscuits and walnuts add a lovely crunchy texture and flavour. I'm sure you could use other biscuits but I haven't tried that yet.

Serves: 24 

  • 225g butter
  • 140g brown sugar
  • 1/2 (397g) tin condensed milk
  • 2 tablespoons golden syrup
  • Drop of vanilla essence
  • 450g (1 lb) plain Rich Tea biscuits, crushed
  • 55g chopped walnuts

Prep:5min  ›  Cook:10min  ›  Extra time:2hr cooling  ›  Ready in:2hr15min 

  1. Line a baking tray or square tin with greaseproof paper.
  2. Melt butter in saucepan over medium heat. Stir in sugar, milk and golden syrup; boil gently for 10 minutes.
  3. Remove pan from the heat; stir in crushed biscuits and walnuts. Press into prepared pan and leave to set, about 2 hours. Cut into squares.
