A lighter coloured fruit cake that would work as a Christmas cake but tastes good to me any time of year!

225g butter
225g caster sugar
4 eggs, beaten
1 dessertspoon golden syrup
225g flour
350g mixed fruit
50g glace cherries
Pinch of ground ginger

Preheat the oven to 150 C / Gas 2. Lightly butter and flour a cake tin.
Cream together butter and sugar until light and fluffy. Mix in beaten eggs and syrup. Stir together flour, mixed fruit, cherries and ground ginger; fold into butter mixture and pour into prepared tin.
Bake in the preheated oven until a skewer inserted into the centre of the cake comes out clean, about 2 hours.
