Lilia's fruit cake

    A lighter coloured fruit cake that would work as a Christmas cake but tastes good to me any time of year!

    Makes: 1 cake

    • 225g butter
    • 225g caster sugar
    • 4 eggs, beaten
    • 1 dessertspoon golden syrup
    • 225g flour
    • 350g mixed fruit
    • 50g glace cherries
    • Pinch of ground ginger

    1. Preheat the oven to 150 C / Gas 2. Lightly butter and flour a cake tin.
    2. Cream together butter and sugar until light and fluffy. Mix in beaten eggs and syrup. Stir together flour, mixed fruit, cherries and ground ginger; fold into butter mixture and pour into prepared tin.
    3. Bake in the preheated oven until a skewer inserted into the centre of the cake comes out clean, about 2 hours.
