Superb cream

    Sounds like a strange name but this cream really is superb! It's basically a thick, slightly set cream that you can use as a cake filling or for cream fingers, butterfly buns or to ice cupcakes.

    Makes: 300 g

    • 3 teaspoons gelatine
    • 3 tablespoons hot water
    • 2 eggs, separated
    • 3 tablespoons golden syrup
    • Pinch of salt
    • 355ml (3/4 pt) milk, warmed
    • Dash of vanilla essence

    1. Dissolve gelatine in hot water; set aside. Beat egg whites until stiff; set aside.
    2. Beat eggs yolks, golden syrup and salt in a saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture coats the back of a spoon, 10 to 15 minutes. Be careful not to boil!
    3. Fold in dissolved gelatine, vanilla and egg whites. Cool and leave to set, about 2 hours.
