Ginger walnut fudge

    A rich fudge which has a nice flavour kick from ground ginger and added crunch from crushed biscuits and walnuts.

    • 100g butter
    • 3 tablespoons condensed milk
    • 175g brown sugar
    • 1 teaspoon ground ginger
    • 225g plain biscuits
    • 50g chopped walnuts

    1. Melt butter and condensed milk in a saucepan over low heat - do not allow to boil. Stir in sugar and allow to melt, stirring continuously. Add ginger, biscuits and walnuts; pour into a flat baking tin or tray and allow to set, 1 to 2 hours.

    Ingredient changes I made were: 150g brown sugar, 200g biscuits, 1 1/2 ground ginger. I also added some chopped crystallised ginger for extra 'zing' . The changes worked well, though for my taste I will reduce the sugar a little more next time. Managed to rescue it from hubby before he ate the lot in one go!  -  29 Oct 2016


    I made this today. I added an extra 1/2 teaspoon of ginger and reduced the biscuits to half the amount and added extra walnut, it has a lovely creamy , caramel flavour with the added zing of ginger. Delicious!!!  -  10 Dec 2015
