dairy free ice cream recipe with eggs (no ice cream machine)

    My sister came to see me this w-e from Belgium, with that lovely ice-cream recipe. Knowing I am totally dairy free, she brought those Alpro Soya cream to whip and this is a very easy ice cream recipe, dairy free and delicious (note : the eggs are used raw!).

    Serves: 8 

    • 4 eggs
    • 125g sugar
    • 500 ml soya whip cream (I used the Alpro)
    • either : 1 tsp vanilla or 200 ml raspberry (strawberry,...) coulis or 200 g speculoos lotus

    1. Beat egg whites until they are fluffy and stiff peaks form when the whisk is lifted. Then add sugar, slowly to keep the mix thick.
    2. Whip the cream until nice and thick.
    3. Then gently, trying to not cut trough the mixture of egg white-sugar,add the cream first, the mixed yolks and either the vanilla, the coulis or the speculoos (I used Lotus Speculoos)
    4. Put it in a big plastic container (like an old ice cream box), in the freezer and mix it every half an hour about 3 times.
    5. It tastes better if you take your ice cream out of the freezer 5 minutes before eating.
