Gambas Pil Pil

    • 7 tbsp Extra Virgin Olive Oil
    • 4 cloves Garlic - very thinly sliced
    • 1 small fresh Red Chilli - thinly sliced and seeded to taste and heat required
    • 360g/12oz raw Gambas - peeled and deveined
    • 2tbsp flat leaf Parsley - finely chopped
    • Sprinkling of ground Paprika
    • Lemons - sliced and/or cut into wedges
    • Crusty Bread
    • Salt and freshly ground Black Pepper


    1. Heat the oil in a frying pan over a medium high heat;
    2. Add garlic and chilli and cook for about 1 minute, stirring, until the garlic just starts to brown but not burn;
    3. Add the prawns, season, add sprinkling of paprika and cook for a further 2 to 3 minutes, stirring continuously, until they turn pink and are just cooked through;
    4. Remove from heat, stir in the parsley and serve the prawns in their sauce immediately in a warmed bowl - The prawns should still be sizzling in the sauce;
    5. Serve with the lemon and masses of crusty bread
