Crusted salmon fillets

    These tasty salmon fillets are topped with breadcrumbs and cheese and baked until golden brown. Perfect with a side of pasta and a salad.

    Serves: 8 

    • 1 tablespoon butter
    • 2 large onions, sliced
    • 600ml (1 pt) double cream
    • 4 heaped teaspoons wholegrain mustard
    • 6 (170g / 6 oz) fillets salmon, skinned and boned
    • salt and pepper to taste
    • 110g (4 oz) fresh brown breadcrumbs
    • 110g (4 oz) grated cheese

    1. Preheat oven to 180 C / Gas 4. Grease a rectangular ovenproof casserole dish.
    2. Melt butter in a frying pan and gently cook and stir onions until soft. Line the bottom of the prepared dish with the onions.
    3. Mix the cream with the mustard and seasoning. Arrange salmon fillets over the onion and pour over the cream mixture. Cover with tin foil.
    4. Bake in the preheated oven for 20 to 30 minutes.
    5. Combine the breadcrumbs with the cheese.
    6. Uncover the salmon, and sprinkle the breadcrumbs on top. Brown under the oven grill.
