Potato, green bean and bacon salad

    One bite and you are hooked on this tasty, packed with flavour potato salad. The perfect accompaniment for any table, occasion and time of year.

    Serves: 4 

    • 1kg (2 lb) potatoes, boiled and cut into cubes
    • 225g (8 oz) green beans, blanched and cut into 5cm pieces
    • 1 red onion, very finely sliced
    • 175g (6 oz) streaky bacon rashers, fried and chopped
    • salt and freshly ground black pepper to taste
    • chopped fresh parsley to garnish (optional)
    • Dressing
    • 2 tablespoons white wine vinegar - to taste
    • 1 1/2 tablespoons wholegrain mustard
    • salt and freshly ground black pepper to taste
    • 4 tablespoons extra virgin olive oil

    1. Prepare the dressing - mix the mustard and wine vinegar together, season and slowly drizzle in the oil, stirring continually, to bind everything together. Taste for tanginess and piquancy.
    2. Put the potatoes, green beans, onion and the crispy bacon in a large salad bowl. Combine well and season to taste.
    3. Pour the dressing over the potatoes and serve.
