450g (1 lb) sweet potatoes, peeled and cut into batons
1 large carrot, cut into batons
1 parsnip, cut into batons
extra virgin olive oil
salt and freshly ground black pepper to taste
4 to 6 sprigs thyme
maple syrup to taste

Pre-heat oven to 190 C / Gas 5.
Scatter potato and vegetable batons in a large baking tray.
Drizzle over with oil, season with salt and pepper and roast for 15 to 20 minutes until veg mixture is softish but still with some bite. Then add the thyme sprigs and a drizzle of syrup. Toss and return to oven for 15 minutes.
You could use honey instead of maple syrup, if desired. You could also use more parsnips in place of some of the sweet potato.
