Quick tagliatelle carbonara

    A quick tagliatelle carbonara recipe perfect for an easy family dinner. Serve with fresh salad and crusty bread.

    Serves: 2 

    • 225g (8 oz) fresh or dried tagliatelle
    • 1 tablespoon olive oil
    • 6 rashers back bacon, sliced thinly
    • 4 large egg yolks
    • 4 tablespoons single cream
    • 2 tablespoons grated Parmesan cheese
    • ground black pepper, to taste
    • chopped fresh basil, to taste

    1. In a large saucepan with lightly salted boiling water, cook pasta according to instructions until al dente.
    2. In a frying pan, heat the oil and fry bacon for 2 minutes. Remove from heat.
    3. Whisk egg yolks until creamy. Add cream, 1/2 of the Parmesan cheese and black pepper to taste.
    4. Drain the pasta. In the bacon frying pan, mix in pasta and pour in the egg cream mixture. Stir gently and serve with the remaining Parmesan cheese.
