Bacon and walnut tagliatelle

    This delightful pasta dish combines the flavours of bacon, walnuts and fresh parsley to give a pleasing overall result. Serve with a crisp salad.

    Serves: 2 

    • 225g tagliatelle pasta
    • 225g smoked bacon, rind removed and chopped
    • 2 cloves garlic, crushed
    • 1 large handful fresh parsley, chopped
    • 60g walnuts, finely chopped
    • salt and pepper, to taste
    • grated Parmesan cheese, to taste

    1. Cook tagliatelle in lightly salted boiling water until al dente; drain and transfer to a heated serving bowl.
    2. Heat a dry frying pan over medium heat; add bacon and cook until the fat renders. Increase the heat and cook until bacon is crispy; transfer bacon onto kitchen paper, leaving the fat in the pan. Add garlic, parsley and walnuts to pan and cook over medium heat for 1 minute; season with salt and pepper.
    3. Add the bacon and tagliatelle to the pan; toss everything together and serve with grated Parmesan cheese.
