French onion and bacon quiche

    This is a classic French recipe for two onion and bacon quiches. It is really quite simple and absolutely delicious.

    Makes: 2 quiches

    • For the pastry
    • 225g (8 oz) plain flour
    • 110g (4 oz) lard
    • 2 tablespoons water
    • 55g (2 oz) freshly grated cheese
    • For the filling
    • 450g (1 lb) onions, thinly sliced
    • 110g (4 oz) butter
    • 225g (8 oz) streaky bacon, chopped
    • 2 eggs
    • 300ml (1/2 pt) milk
    • pepper, to taste
    • 2 tablespoons Worcestershire sauce

      For the pastry:

    1. Preheat oven to 200 C / Gas 6. Grease two 18cm (7 in) loose base quiche dishes.
    2. Sift flour and rub in lard until it resembles breadcrumbs. Add water and cheese and combine to a smooth dough. Separate into two. Knead, roll out and line the prepared quiche dishes.
    3. Cover the pastry shells with baking parchment, and fill with dried beans.
    4. Bake blind for 15 minutes. Remove both tins from the oven. Remove the beans and baking parchment.
    5. Turn oven down to 180 C / Gas 4.
    6. For the filling:

    7. Fry onions in butter until brown. Drain. Spread over the base of both pastry cases. Fry bacon lightly and sprinkle over onions. Beat eggs and add milk, pepper and sauce. Pour into the tins.
    8. Bake for 35 minutes until set.


    The cooked quiches freeze well. If you want to serve from the freezer, heat at 180 C / Gas 4 for 35 minutes.
