Broad bean and bacon pasta

    A creamy and delightful bacon and bean pasta dish. Enjoy with a green salad and a chilled glass of white wine. Just perfect for a summer afternoon!

    Serves: 4 

    • 340g (12 oz) broad beans, pods removed
    • 340g (12 oz) dried pasta, of your choice
    • 170g (6 oz) reduced fat cream cheese
    • 140ml (5 fl oz) single cream
    • 55ml (2 fl oz) semi skimmed milk
    • 340g (12 oz) rindless streaky bacon, chopped and cooked
    • salt and pepper, to taste
    • chopped fresh chives, to garnish

    1. Briefly immerse the beans in a saucepan with hot water, just for about 5 minutes until they turn bright green. Drain and plunge into cold water. Drain and set aside.
    2. Cook pasta in a large saucepan with lightly salted water until al dente. Drain.
    3. Soften the cream cheese over gentle heat with the cream and milk. Stir in beans and bacon and cook for 1 minute until heated through.
    4. Combine the pasta and the sauce and toss. Season and sprinkle with chives to serve.
