Quick butterscotch sauce

    Sweet and sticky, this butterscotch sauce whips up in a snap. It's wonderful hot or cold, on top of cakes, fruit or ice cream.

    Serves: 4 

    • 3 tablespoons brown soft sugar
    • 1 tablespoon golden syrup
    • 1 tablespoon water
    • 1 tablespoon butter
    • 2 dessertspoons cornflour
    • 2 dessertspoons water
    • 1/2 teaspoon vanilla essence

    1. Place sugar, syrup, 1 tablespoon water and butter in a saucepan. Heat till nearly boiling, then stir in cornflour and 2 dessertspoons water.
    2. Bring to the boil and stir for 3 minutes. Remove from heat and stir in vanilla essence.
