Maida's caramel sauce

    Caramel sauce is the perfect topping for cakes, fruit, tarts, ice cream and so much more. This version is easy to make and doesn't require a sugar thermometer.

    Serves: 4 

    • 1 tablespoon butter
    • 2 teaspoons soft brown sugar
    • 1 dessertspoon golden syrup
    • 2 tablespoons condensed sweetened milk
    • 4 tablespoons hot water

    1. Melt the butter in a saucepan over medium heat. Add sugar, syrup and milk. Stir over high heat until thick and dark in colour, 5 to 7 minutes.
    2. Remove from heat and add water a little at a time. Return to heat, simmer and stir until smooth, 2 to 3 minutes. Allow to cool before serving; if a thinner sauce is desired, add 2 tablespoons milk or water.
