    About this recipe: Whether you call it gingerbread or ginger cake - this is the easiest recipe I know for that delicious sticky treat! For a special occasion, you could spread a layer of icing on top.

    Makes: 1 loaf

    • 85g butter
    • 80ml boiling water
    • 80ml golden syrup
    • 75g sugar
    • 1 egg, beaten
    • 150g flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon bicarbonate of soda
    • 1/2 teaspoon baking powder
    • 1 teaspoon ground ginger

    1. Preheat the oven to 180 C / Gas mark 4. Grease and lightly flour a loaf tin.
    2. Place butter in a mixing bowl; pour boiling water over and stir until melted. Add golden syrup, sugar and egg; stir until sugar is dissolved. Sift flour, salt, bicarbonate of soda, baking powder and ginger into the bowl; beat until smooth. Pour cake batter into prepared tin.
    3. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 30 to 40 minutes. Allow to cool in the tin.
