Sausage and macaroni pie

    This sausage and macaroni pie is great for using up any leftover macaroni and tastes great with a crisp salad and baked potato.

    Serves: 6 

    • 55 to 85g (2 to 3 oz) macaroni, cooked
    • 450g (1 lb) pork sausages, cooked and chopped
    • 2 to 3 tomatoes, sliced
    • chopped fresh parsley, to taste
    • stock, as needed
    • salt and pepper, to taste
    • 1 sheet pastry, rolled out thin

    1. Preheat oven to 200 C / Gas 6. Grease a casserole dish.
    2. Combine the macaroni, sausages and sliced tomatoes. Transfer macaroni, sausage and tomatoes into the prepared casserole dish. Add parsley, a little stock and season. Cover with the pastry.
    3. Bake in the oven for 15 minutes, then reduce the heat to 180 C / Gas 4 and finish cooking for about 30 minutes, until pastry is golden brown.
