A delightful quiche, rich in flavour and made substantial by the sausages. The onion marmalade is a delightful addition to the quiche adding a great depth of flavour. Enjoy with a baked potato and a crisp salad.
Preheat oven to 190 C / Gas 5. Grease or line a 20cm quiche dish with baking parchment.
For the marmalade:
Heat oil and marmalade in a saucepan, add the onion and cook gently over medium heat until onions are soft and the sauce has thickened. Season to taste. Remove from heat and set aside.
For the quiche:
Roll out the shortcrust pastry and line the prepared quiche dish.
Bake the pastry blind for 10 minutes in the preheated oven. Remove and allow to cool a little. Turn oven down to 180 C / Gas 4.
In a frying pan, cook the sausages for 10 minutes, or until they are brown. Split the sausages lengthways and set aside.
In a bowl mix together breadcrumbs, cream, mustard and eggs. Set aside.
To assemble the quiche, spread the onion marmalade in the bottom of the prepared pastry shell. Lay the sausages over the top and then pour in the egg and cream mixture.
