    About this recipe: A pork fillet is simmered slowly in a spiced stock with cinnamon and brown sugar until very tender. Serve sliced on a roll or with mashed potatoes and vegetables.

    Serves: 8 

    • 110g (4 oz) butter
    • 3 large onions, minced
    • 1.5kg (3 1/2 lb) pork fillet
    • 1/2 small bottle tomato ketchup
    • juice from 1 lemon
    • 1 1/2 tablespoons vinegar
    • 85g (3 oz) soft brown sugar
    • 1/2 teaspoon ground cinnamon
    • 3 teaspoons prepared mustard
    • several dashes Worcestershire sauce
    • 1/4 teaspoon salt
    • 300ml (1/2 pt) water

    1. Melt the butter in a large saucepan and cook and stir onions until soft. Add the pork and cook until browned on all sides for 5 minutes. Add the other ingredients and pour in the 300ml water.
    2. On a medium heat, cover and simmer for 90 minutes, until meat is tender.
    3. Slice and serve.
