Family meatloaf

    A fantastic recipe for a moist, perfectly seasoned meatloaf. Enjoy with some mashed potatoes and vegetables.

    Serves: 4 

    • For the meatloaf
    • 2 eggs, beaten
    • 160ml milk
    • 1 teaspoon salt
    • pepper, to taste
    • 3 slices bread, crumbed
    • 1 medium onion, chopped
    • 60g carrot, grated
    • 120g Cheddar cheese, grated
    • 700g beef mince
    • For the sauce
    • 60ml passata
    • 1 dessertspoon prepared mustard
    • 1 dessertspoon brown sugar

    1. Preheat oven to 180 C / Gas 4. Grease a 23x13cm (9x5 in) loaf tin.
    2. For the meatloaf:

    3. In a bowl, combine the eggs, milk, salt, pepper and breadcrumbs. Mix with hands until well blended. Stir in onion, carrot, cheese and mince and mix until the ingredients bind.
    4. Pack the mince mixture into prepared loaf tin.
    5. For the sauce:

    6. Combine the passata, prepared mustard and brown sugar in a small bowl. Spread the mixture over the top of the loaf.
    7. Bake meatloaf in the preheated oven for 1 hour. Let rest for 10 minutes before slicing. Serve hot or cold.
