Easy apricot fudge

    So easy to make and yet so tasty! This rich fudge has sweet chunks of dried apricots and a little crunch from crumbled biscuits.

    Serves: 12 

    • 110g (4 oz) unsalted butter
    • 1/2 (400g) tin condensed sweetened milk
    • 55g (2 oz) soft brown sugar
    • 200g marie tea biscuits, crumbled
    • 170g dried apricots, cut into pieces

    1. Melt butter, milk and sugar in a saucepan, stirring continuously. Mix in biscuits and apricots; pour into a lightly greased tin and allow to cool in the fridge for at least 4 hours before cutting into pieces.
