Makes: 1 flan

  • 225g (8 oz) plain flour
  • 55g (2 oz) caster sugar
  • 140g (5 oz) butter, softened
  • 1 egg yolk
  • 3 tablespoons cold water
  • 400g (14 oz) mincemeat
  • 1 apple, grated
  • 1 tablespoon strong cider

  1. Preheat the oven to 180 C / Gas 4.
  2. Combine flour and sugar in a bowl; work in butter until dough resembles bread crumbs. Combine egg yolk and water and stir into dough. Gently knead on a floured surface; chill for 30 minutes.
  3. Roll out pastry and line a 20cm (8 in) flan ring or dish; prick base with a fork. Set some pastry aside for topping.
  4. Mix mincemeat, apple and cider together; spoon into pastry. Arrange pastry strips across the top.
  5. Bake in the preheated oven until golden, about 35 minutes.
