Rice Krispie® and date squares

    These chewy, crispy squares are made with a combination of dates and rice crispy cereal and require no baking.

    Serves: 8 

    • 75g butter
    • 75g sugar
    • 225g dates, pitted and chopped
    • 30g rice crisp cereal

    1. Line a small square traybake tin with greaseproof paper.
    2. Place butter, sugar and dates in a saucepan; stir over medium heat until melted and just about boiling, about 5 minutes.
    3. Remove from heat and allow to cool slightly; stir in rice crisp cereal. Pour mixture prepared tin; chill in fridge until set before slicing into squares or fingers.
