    About this recipe: This quick and easy tikka masala is ready in about 30 minutes and is packed with loads of flavour. Great served with rice and naan. Even better reheated after a day in the fridge and freezes well.

    Ingredients
    Serves: 4 

    • 2 tablespoons vegetable oil
    • 1 tablespoon butter
    • 1 large onion, finely chopped
    • 2 red peppers - seeded and finely chopped
    • 4 tablespoons tikka masala curry paste
    • 4 chicken breasts, diced
    • 1 (400g) tin tomato soup
    • 1 (400g) tin chopped tomatoes
    • 4 tablespoons mango chutney
    • 150g low fat natural yoghurt
    • curry powder, taste
    • chopped fresh coriander, to taste

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat oil and butter in a large frying pan. Add onion and fry until soft.
    2. Add peppers and tikka masala paste and cook for 5 mins.
    3. Add chicken and mix well so coated in the paste. Cook for a few minutes, turning the diced chicken for even cooking.
    4. Add the soup and the chopped tomatoes and simmer for around 20 minutes until the chicken is cooked and the sauce is beginning to thicken.
    5. Stir in mango chutney, natural yoghurt and curry powder to taste and warm through. Garnish with chopped coriander.
