Melt margarine, honey, sugar and water in a pan or microwave in a microwavable bowl.
Stir grated orange zest into the melted ingredients.
Sieve in dry ingredients (flour, mixed spice, salt and bicarbonate of soda) and stir in with wooden spoon, until all ingredients are combined and a dough is formed.
Roll out the dough on a floured surface and cut into stars (or another christmassy shape) using a cutter.
Bake for 7-10 mins at 190 C / Gas Mark 6, or until the biscuits look golden.
Cool on a wire rack.
When the biscuits have cooled completely, melt the white chocolate and coat each biscuit generously, so that the entire biscuit is covered. (I do this by dipping them in the chocolate bowl and using a table knife to remove any excess.) Then place the biscuits back onto the wire rack.
Put the biscuits in the fridge to set the chocolate.
Makes approx 50 biscuits when using a small cutter, and these work out at 45 calories each.
