About this recipe: Fudge is a classic sweet treat that everyone enjoys. With a touch of honey, this fudge is sweet, creamy and satisfying.

Makes: 500 to 600g fudge

  • 120ml (1/4 pt) milk
  • 1 (200g) tin condensed sweetened milk
  • 110g (4 oz) butter
  • 2 tablespoons honey
  • 450g (1 lb) sugar
  • 1 pinch of cream of tartar

  1. Grease a shallow 18cm (7 in) tin.
  2. Place milk, condensed milk, butter, honey, sugar and cream of tartar in a thick-bottomed saucepan over high heat; stir until dissolved. Boil, stirring quickly, until temperature reaches 115 degrees C, 7 to 8 minutes.
  3. Beat until thick and pour into prepared tin. Leave to set, about 4 hours.
