Sultana loaf cake

    A moist fruit loaf cake, packed with sultanas and mixed peel. It's delicious for breakfast or a mid morning snack.

    Makes: 1 loaf

    • 350g sultanas
    • 2 tablespoons mixed peel
    • 225g butter, softened
    • 225g caster sugar
    • 3 eggs, beaten
    • 275g plain flour
    • pinch of salt
    • 1 teaspoon baking powder

    1. Preheat the oven to 160 C / Gas 3. Lightly grease a 2lb loaf tin.
    2. Place sultanas and mixed peel in a saucepan; cover with cold water and bring to the boil. Simmer for 10 minutes; drain and set aside.
    3. Cream butter and sugar together until light and fluffy; add eggs, flour, salt and baking powder. Mix sultanas and mixed peel into the cake mixture; pour into prepared tin.
    4. Bake loaf cake in preheated oven for 1 hour 30 mins or until firm to the touch. Leave in tin for 5 minutes before transferring to a wire rack to cool completely.
