Warm duck breast salad

    This exquisite warm duck breast salad is well seasoned and drizzled with an orange and honey-mustard dressing. This recipe serves 8, so just perfect as a dinner party salad or for some other special occasion.

    Serves: 8 

    • 2 tablespoons ground coriander
    • 2 teaspoons ground ginger
    • 2 teaspoons ground mace
    • 1 clove garlic, crushed
    • 110ml (4 fl oz) orange juice
    • 300ml (1/2 pt) olive oil
    • salt and pepper, to taste
    • 8 (5 oz) boneless duck breasts, skinned
    • 1 tablespoon honey
    • 1 tablespoon vinegar
    • 2 tablespoons Dijon mustard
    • 8 handfuls mixed salad leaves, of your choice
    • 200g (7 oz) pitted black olives, chopped

    1. Preheat the oven to 200 C / Gas 6.
    2. In a bowl, combine the coriander, ginger, mace and garlic with 2 tablespoons each of orange juice and olive oil. Season with salt and pepper to taste.
    3. Coat the duck breasts with the spice mixture on both sides and place in a shallow ovenproof dish.
    4. Roast in the oven for 15 to 20 minutes. Remove from the oven and keep warm.
    5. For the dressing, whisk together the honey, vinegar, mustard and remaining orange juice and oil. Season to taste.
    6. To serve, slice the duck breast and arrange over a bed of salad leaves and chopped olives. Drizzle with the dressing and serve.
