Easy kedgeree

    This quick and easy kedgeree is made with smoked haddock, rice and hard boiled eggs. It's flavoured with curry powder and parsley making it a great brunch choice for all ages.

    Ingredients
    Serves: 4 

    • 225g long grain rice
    • 75g butter
    • 225g cooked smoked haddock fillet, flaked
    • 2 hard boiled eggs, chopped
    • 1 tablespoon medium curry powder
    • salt and freshly ground black pepper, to taste
    • 2 tablespoons single cream
    • 1 teaspoon parsley

    1. Boil rice in lighted salted water according to instructions on the packet; drain.
    2. Melt butter in a pan over medium heat. Add flaked haddock and chopped eggs; heat through and season with curry powder, salt and pepper.
    3. Stir in cooked rice, cream and parsley; serve hot.
