Mixed fruit loaf

    An easy to follow recipe for a mixed fruit loaf that uses lard to give it a great texture and flavour. This loaf cake is moist, dense, not too sweet and everything a hearty fruit loaf should be.

    Makes: 1 fruit loaf

    • 225g (8 oz) self raising flour
    • 55g (2 oz) lard
    • 55g (2 oz) margarine
    • 110g (4 oz) sugar
    • 2 eggs, beaten
    • 700g (1 1/2 lb) mixed dried fruit

    1. Preheat oven to 160 C / Gas 3. Grease a 900g (2 lb) loaf tin.
    2. In a bowl rub the lard and the margarine into the flour until the mixture resembles fine breadcrumbs. Add the sugar and then the beaten eggs. Mix in the fruit and pour into the prepared loaf tin.
    3. Bake for 1 hour in the preheated oven, until risen and firm and a skewer inserted into the centre comes out clean.
    4. Allow to cool before turning out onto a cooling rack. Once cooled completely, slice and serve.
