In a large saucepan, heat the oil and cook and stir the onion and garlic until soft. Stir in the curry paste and cook for 2 to 3 minutes, then add the flour and cook for a further 1 to 2 minutes, stirring continuously. Whisk in the tomato juice and stock and simmer for 5 to 10 minutes until sauce thickens. Taste and season.
