Curry sauce for chips

    Curry sauce and chips are a match made in heaven! This quick and easy curry sauce has a great flavour and consistency, perfect for dipping and pouring.

    Makes: 300 ml curry sauce

    • 1 tablespoon oil
    • 1 onion, finely chopped
    • 1 to 2 cloves of garlic, crushed
    • 1 to 2 tablespoons curry paste
    • 25g plain flour
    • 200ml tomato juice
    • 150ml stock
    • salt and pepper, to taste

    1. In a large saucepan, heat the oil and cook and stir the onion and garlic until soft. Stir in the curry paste and cook for 2 to 3 minutes, then add the flour and cook for a further 1 to 2 minutes, stirring continuously. Whisk in the tomato juice and stock and simmer for 5 to 10 minutes until sauce thickens. Taste and season.
    2. Once cooled, transfer to a container to store.
