Christmas just isn't complete without cranberry sauce, and it is even better with fresh cranberries. Autumn is the time to harvest the fruit and you can also look for them in farm shops or at your local grocer around this time.
In a large saucepan over a low heat, combine the cranberries, sugar, orange zest, juice and port. Give it a good stir and cook over a low heat for 1 to 1 1/2 hours until the cranberries have broken down and the sauce has thickened. Serve at room temperature.
