Spanish rice

    A lovely easy to make recipe that runs in my family, created by my nan I believe! My kids go mad for this!

    Serves: 4 

    • 500g white rice
    • 1 large onion
    • 1 red pepper
    • 1 green pepper
    • 4 gloves of garlic
    • 1 pack of smoked bacon or smoked sliced gammon
    • 1 tin tomato soup
    • 1 tin marrowfat peas
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    • 2 teaspoons garlic salt, or to taste

    1. Put rice on to boil using method 1 cupful of rice to 2 cupfuls of water and bring to the boil.
    2. While waiting, dice up peppers, onions, garlic and bacon or gammon. Heat frying pan and fry together until cooked through and put to one side.
    3. Once rice has begun to boil, bring heat down, cover and simmer for about 20 minutes or until rice is cooked. Drain rice and put back in large pot.
    4. Heat tomato soup until piping hot and pour over rice, bit by bit. Add enough that the rice is a lovely orange colour but not drenched in soup and runny.
    5. Add fried bacon, onions, garlic and peppers to the rice then finally add salt and pepper and garlic salt and 1 tin of drained marrowfat peas. Stir well making sure soup and veg thoroughly mixed through and serve!


    Sometimes i put in dish cover in cheese and bake in oven for 10 minutes.
